Meal 3: Baked sweet potato with spicy yoghurt sauce
OMG Guys, I am super excited about this post, because my meal 3 was so heavenly amazing and i can’t wait to share my delicious new creation with you. Here it goes :)
Ingredients:
Preparation:
First of all i added my sweet potato into a sauce pan with boiling water. While the potato was boiling, i chopped the garlic and together with some cinnamon, smoked paprika, pinch of salt and loooots of ground black pepper added to the yoghurt. Mixed well.
Then i chopped the tomato and onion, and together with the kale added into a pan with some water. I also put some smoked paprika and black pepper, stirred, reduced the heat, covered and left to simmer for 3 minutes until the onions got tender. Then I added the the lightly boiled onion, tomato and kale into the yoghurt mixture and stirred everything together.
The spinach was used to make a ‘bed’ for the sweet potato.
I boiled the sweet potato for about 40 minutes until it was soft inside (checked with a fork) and then put it into the oven for another 10.
Finally, when the sweet potato was nice and brown, i took it out of the over, cut a cross in the middle, placed it on top of the spinach, peeled the skin slightly and poured the sauce on top and around. The dill on top is optional.
Ok, I can honestly say, this is one of the most delicious things i have ever tasted and it’is super healthy as well. If you love ToneItUp! as much as i do, you know that sweet potatoes are one of the the best sources of carbs. So i highly recommend you to try and make this delish dish at home! Believe me you won’t regret it! :)
